Chai spiced pumpkin pie

Every year I make a pumpkin pie for Thanksgiving.  It’s not necessarily my favourite pie but once a year it’s fun to make, share and have a slice.   I don’t have a family secret pumpkin pie recipe that has been passed down the generations or anything.  I just used the old standard  E.D. Smith pumpkin pie recipe on the back of the pumpkin pie filling can.  Works for me.  This time though, I decided to use my spices and in particular the tea masala chai spice mix below that I found in Little India in Toronto this fall.  I’m really enjoying this chai spice mix I found in one of the shops there.  I’m probably not using it exactly as intended but I’m still loving it.  When you open the container, the smell is amazing!  Smells like you’re in a pot of brewing chai!  This is what I used instead of the all the spices called for in the E.D. Smith pumpkin pie recipe which can be found in the references below. I ended up with a very flavourful chai spiced pumpkin pie.

It was quite the drama as the baking element in the oven burnt out and broke just as a started baking my pies and on Thanksgiving day it’self. It was terrible.  I had to freeze my unbaked pies, look for an element, repair the oven, defrost the pies and start baking them again.  It was quite the adventure but one day after Thanksgiving and this is what I ended up with.  Two beautifully baked, chai spiced pumpkin pies!  Yummy!  I also, of course, make my own crust. Again, no secret family pie crust recipe just the tried and true, classic pie crust recipe from the Crisco shortening box which can be found in the references as well.

Modifications: 

I am thinking about the idea of adding some chai spice into the pie crust dough.  

Alternate tea choices: 

I’m thinking matcha powder instead of the chai spices. 

Notes:  

I’m no cook, chef or baker so everything I make is based on the enjoyment of creating something new, cooking, baking and especially tea!  I hope you enjoy the recipes, both making them and the tasting the results!
