Ingredients: 1c butter; 1/2 c white sugar; 1/2 c brown sugar; 2 eggs; 1 tsp baking soda; 1 tsp vanilla; 2c flour; 2c rolled oats; 1 tsp cinnamon; 1/2 tsp salt; 3 bananas, mashed; 1 c chocolate chips

I had these bananas sitting on the table slowly getting old and wanting to be use in some way. I really wanted to do something different from the usual banana bread, banana smoothie or banana pancakes. I was thinking bananas in cookies would be nice. So I did some searching on my favorite platform for recipes, Pinterest, and did a search to if there was a such a thing, banana cookies. Of course, there were recipes, for cookies with bananas in them and even better, banana chocolate chip cookies. After looking at a number of recipes and looking at what I had in my cupboards, this is what was born.

Banana Oatmeal Cookies

Notes

Really nice and moist chocolate chip cookies, almost like a banana bread.

Ingredients

1c butter
1/2 c white sugar
1/2 c brown sugar
2 eggs
1 tsp baking soda
1 tsp vanilla
2c flour
2c rolled oats
1 tsp cinnamon
1/2 tsp salt
3 bananas, mashed
1 c chocolate chips

Instructions

Preheat oven to 375C.
Cream together butter and sugars.
Beat in eggs and vanilla.
In a separate bowl, mix flour, oatmeal, baking soda, cinnamon and salt.
Add dry ingredients to butter and sugar mixture.
Mix in mashed bananas and chocolate chips.
Using a cookie scoop, scoop mixture into cookie tray.
Bake for 12 minutes or until edges are brown.
Cool.
