The best clipper chocolate chipper cookie with Marsala recipe

I love chocolate chip cookies!  They seem like a simple cookie but they’re not. There are so many variations on the chocolate chip cookie and once you’ve had a homemade chocolate chip cookie, can you really go back to store bought?  I know I can’t.   Years ago, while in university my mother gave me this book of chocolate chip cookies recipes because I was baking so much. It was a great little book.  It seems the book is a compilation of all these chocolate chip cookie recipes sent in for a chocolate chip cookie contest.  Everyone provides their favorite or best cookie recipe.  I’ve tried many but not all of the recipes. This one below is one of the recipes, with a great name, clipper chocolate chipper!  I modified it slightly and I have ideas of how to incorporate tea into it next time.

Ingredients

  • 1c granulated sugar
  • 1 c brown sugar
  • 2 cups butter
  • 5 tbsp baking soda
  • ¼ c marsala (or any other liqueur you may have)
  • ¼ c rum (or any other liqueur you may have)
  • 1 tbsp salt
  • 3 eggs
  • 6 cups pastry flour
  • 4 cups chocolate chips
  • ½ c walnuts

Directions

  1. Cream together the sugars, butter, baking soda, liqueurs and salt until light and creamy.
  2. Add eggs beating after each addition until well blended.
  3. Stir in flour, chocolate chips and nuts and mix until well blended.
  4. Drop by tablespoons into greased baking sheets
  5. Flatten slightly.
  6. Bake at 350C for 8-10 minutes or until golden brown.

Makes about 4 dozen.

Notes: 

I found this recipe was almost disappointing as far as cookies go.    It wasn’t very sweet like a cookie.  I don’t really like overly sweet things, but this wasn’t sweet at all.  It felt almost like a biscuit and that’s what it was good for, dunking into milk or tea!  So, it’s a perfect cookie for dunking into hot tea!  I also just used whatever alcohol I had which was some Marsala I used for cooking and some Rum I was given during a tour of a Rum factory in Cuba!

Modifications for future versions:   

I’m thinking, instead of alcohol, I will try concentrated tea next time.  Maybe even matcha or chai or an Early Grey or strong black tea.  I’m also thinking in the batter I’d add some tea flakes or in the case of Matcha, add in some matcha powder.  Nuts and chocolate chips, I may use just dark chocolate chips, which I used in this particular recipe and the nuts, I may use less and smaller pieces, almost a coarsely ground nut.   If I were to use a chai tea instead of the alcohol, I think I would use a chat latte and then also add some of the chai spices into the dry ingredients such as cinnamon, cardamom, ginger, cloves and nutmeg.

Alternate tea choices:   

I think there could be any number of alternate tea choices.  As I mentioned above in the modifications, I think instead of the alcohol I would use a concentrated tea.  Ceremonial Matcha, Chocolate Chaga Cake, Chai would all be good choices.  I may do a latte with the chai or Chocolate Chaga Cake.
